  • Green Chilé: Peeled, roasted and simmered with whole tomatoes, onions & spices
  • Red Chilé: Enchilada sauce of fresh ground dried chilis & spices
  • Chorizo: Mexican sausage
  • Fideo: Vermicelli New Mexican style pasta. Very different and very good!!
  • De la olla: “From the kettle”
  • Tamales: Seasoned meat rolled in corn meal dough, wrapped in cornhusks & steamed
  • Taquitos: Crispy rolled tacos
  • Papitas: Potatoes
